Szechuan Spicy Eggplant


Ingredients:

1/4 k.ground pork
cooking oil
2 large eggplant, diced
4 tbsps. soy sauce
1/4 cup chicken stock
1 tsp. chili sauce
1 tsp. white sugar
2 tbsps. oyster sauce
1 tbsp. cornstarch dissolve in 4 tbsps. water
2 cloves garlic, minced
green onions, chopped
1 tbsp. chopped ginger
1 tbsps. sesame oil

Procedure:


~ Saute the garlic, half of the green onions, and ginger in oil.
~ Stir in ground pork and cook until browned.
~
In a bowl, combine the soy sauce, chicken stock, chili sauce, sugar, and oyster sauce. Set aside.
~
Stir in eggplant and the reserve mixture. Cook covered stirring occasionally until the eggplant is cooked.
~ Stir in cornstarch mixture
and let heat until thickened.
~
Finally, stir in the rest of the green onions and the sesame oil.

Shrimp Chowder




I was always threatened by the daunting task of making a chowder because by the very sound of its name - chowder, sounds fancy to me (maybe hard to cook), only the chefs can do it. But I was mistaken. Boy! It was so easy.

Ingredients:

Shrimp, shelled and deveined

Butter

Evaporated milk

Chopped garlic

Chopped onion

Water or chicken stock or chicken boullion cubes dissolved in water

Potato, cubed

Cheese, grated

Salt and pepper to taste

Chopped parsley, for garnish

Procedure:

~ Sauté garlic, onion and shrimp in butter. Set aside.

~ In the same pan, boil water or stock. Add potatoes and cheese.

~ Add shrimp and milk. Cook for a few minutes.

~ Season to taste.

~ Garnish with chopped parsley.

Things aren't always what they seem


So you think I’ve given up on blogging and I suck at it, huh?! Well, hell, no!

I’ve been on some emotional battle the past months and it took me awhile to recover. Everyday I cry the same never-ending tears. The pain is overwhelming than the times I’ve been hesitating to draw the line. If I could only inflict that same pain. But then I had to forgive and leave everything to God.
